Risotto Many Ways

Ingredients
- 1 C risotto
- 1 T olive oil
- 1 T butter (or bacon fat)
- 2 T shallots, chopped
- 1 T garlic. minced
- 1/2 C white wine
- cooking liquid (water or broth, see package for amount)
Options
- Lemon juice and zest (grated)
- Parmesan cheese (grated)
- mushrooms, sliced and sautéed
- peas (blanched)
- lemon, goat cheese and thyme
- bacon, sautéed mushrooms and spinach
- scallops, seared
Instructions
- Heat the olive oil and butter in a sauce pan, then sweat in the shallots and garlic. Add the risotto, wine, and cooking liquid.
- Cover and simmer until the risotto is done, stirring occasionally.
- Add butter and stir until melted, season to taste, then stir in the options.
- Plate and serve.
