  1. Heat the olive oil and butter in a sauce pan, then sweat in the shallots and garlic. Add the risotto, wine, and cooking liquid.
  2. Cover and simmer until the risotto is done, stirring occasionally.
  3. Add butter and stir until melted, season to taste, then stir in the options.
  4. Plate and serve.
